2 1/2 cups red wine
3 sprigs thyme
10 garlic cloves minced

In a medium baking dish, combine chicken, red wine, thyme, and half of the minced garlic. Marinate for 2 to 3 hours in the refrigerator. Spread remaining cloves of garlic evenly across bottom of a small baking dish, cover with olive oil, and sprinkle with pepper.

Bake garlic mixture in a 300-degree oven for 1&1/2 hours or until garlic is tender. Place garlic mixture in a food processor or blender and puree. Remove chicken from marinade. Grill chicken for 10 to 15 minutes, turning frequently and brushing with pureed garlic. Transfer to a platter and serve hot.

2 lbs peaches peeled and pitted cut into thin wedges
2 tbsps fresh lemon juice
1 1/2 c chopped red bell pepper
1 1/4 c chopped sweet onion
2 tbsps curry powder
1/2 tsp cayenne pepper
1/2 c packed brown sugar
1/2 c cider vinegar
1/2 c chopped fresh cilantro
6 skinless boneless chicken breasts

Combine peaches and fresh lemon juice in medium bowl. Place red bell pepper and onion in medium non-stick saucepan. Stir over medium-low heat until vegetables are crisp-tender, about 6 minutes. Add curry powder and cayenne pepper to saucepan and stir 1 minute. Add brown sugar and stir until dissolved, about 2 minutes. Add vinegar; stir 2 minutes. Add peach mixture and accumulated juices to pan and cook until heated through, about 3 minutes.

Transfer to a bowl and cool completely. Season relish to taste with salt and pepper. (Can be prepared up to 5 days ahead Cover and refrigerate.) Mix chopped cilantro into relish. Prepare grill. Season chicken with salt and pepper. Grill until just cooked through, about 5 minutes per side. Cut chicken into thin diagonal slices. Arrange on plates; surround with peach relish.

1/2 ts Pepper
1/2 ts Salt
12 oz Frozen orange juice Concentrate, thawed
2 Whole chicken breasts, Halved, boned, skinned (4 halves 2 lbs total)
6 tb Butter
6 ts Bourbon whiskey
Buttered Almonds:
1/2 c Slivered almonds
1/2 ts Pepper
1/2 ts Salt
2 ts Butter
Preheat oven to 425F.

In large heavy, oven-proof skillet, melt butter; let cool, but do not let solidify. Turn chicken in butter to coat. Season chicken with salt and pepper. Tuck edges of chicken under, forming compact shape about 1 1/2 inches thick. Place chicken in skillet, skinned side up. Bake at 425F, basting occasionally, for about 15 minutes.

Sauté almonds in butter until lightly toasted. Sprinkle with salt. Let cool to crisp. Remove chicken to warm serving plates; keep warm. Add orange juice concentrate to drippings in skillet; stir over high heat until reduced by 1/3. Stir in bourbon; heat through. Stir in remaining salt and pepper; pour sauce over chicken. Sprinkle with almonds and serve.

1/3 c Bourbon
1/3 c Salad oil
1/4 c Soy sauce

Place washed, skinned chicken in baking dish, meaty side down. Mix the bourbon, salad oil, and soy sauce. Pour mixture over chicken and marinate for several hours for enhanced flavor. Bake at 350 F. for 50 min. Serve with hot cooked rice.

How to make it:Sprinkle salt and pepper over the chicken and then dredge them in flour, shaking off the excess. You should coat the bottom of the pan with oil but that is enough.

Add the chicken breasts to the hot pan and sear them for a couple of minutes until they are golden brown. Turn them over and sear the other side. If you are going to double this recipe, do two chicken breasts at a time. Crowding the skillet means you will not be able to brown all your chicken properly.

Turn the heat down to low, and then add chicken broth. It needs to come a third of the way up the chicken breast. If you add to much you will be boiling the chicken, which is not what you want. Add the onions, rosemary, oregano, garlic and lemon.

Cover the pan with a lid that fits tightly and cook the chicken breasts over a low heat until they are done. They are done when a meat thermometer reads 165 degrees F in the thickest part of the chicken breast. If you do not have a meat thermometer, cut into the chicken. It is done when it is white all the way through with no hint of pink in the middle.

1 Tbsp. oregano
3 Tbsp. chili powder
2 tsp. cumin
1 tsp. cayenne pepper
45 oz. black beans from a can (with liquid) - this is approximately 3 small cans of black beans or 1 large can and 1 small can

32 oz. Chili-ready tomatoes
½ jar spaghetti sauce (we like mushroom)
6 oz. tomato paste
Directions:

To prepare this hearty, award winning chicken chili, saute' green pepper and onion in olive oil until soft. Add garlic and cook another 1-2 minutes. Add remaining seasonings and chicken, and mix until thoroughly combined. Add remaining ingredients and simmer for about 25 minutes.

Do You Like Your Lamb Or Chicken Biryani Recipe - 4 Things You Should Consider

Biryani is ordinarily made with lamb or mutton (mutton is the meat from an aged lamb), but lots of folks like to make biryani out of chicken due to the fact that 1) chicken is more affordable than lamb (generally about $2-$4 / lb for chicken vs $7-$9 / pound for leg of lamb), 2) chicken biryani cooks faster, and 3) biryani made with chicken is generally lighter than lamb or mutton biryani.

The lamb should be sliced into 1-2 inch cubes and then the bones can be cooked before the meat is added to flavor the masala. In a biryani made with chicken, the entire chicken can be used, but in a lot of cases people will try to use bone-in pieces of chicken (boneless breast meat, specifically, can very easily dry up when it's cooked for too long). It's best to leave the bones in for all legs, thighs, wings, or breasts.

#3 - Cutting the Meat. As mentioned, the leg of lamb must be cubed into 1-2 inch pieces before being added to the masala and spices. Chicken, on the contrary, should be left in bigger pieces (e.g., the thighs should be halved, legs do not need to be cut) so that it remains moist.

#4 - The purpose of Turmeric. Covering the chopped lamb meat and bones in turmeric is essential to removing the gamey smell and taste from the lamb. Chicken, on the other hand, is not very gamey and turmeric powder is just used for its color.

Low Sodium Recipes - Baked Lemon Herb Chicken With Fresh Mushroom Stuffing Recipe

This is a very moist and flavorful baked lemon herb chicken recipe. Lemon-Herb Chicken With Fresh Mushroom Stuffing
1 whole chicken 3 to 3 1/2 pounds (broiler-fryer size)
2 Tablespoons olive oil, divided
1/4 cup finely chopped green onion
1/2 cup finely chopped celery
1/2 pound (8 ounces) fresh mushrooms, cleaned and thinly sliced
1 Tablespoon Lemon-Herb seasoning, (preferably a salt-free seasoning), divided
1 teaspoon fresh lemon zest (lemon rind, yellow part only), finely grated
1/4 cup fresh lemon juice, divided
1 cup soft or fresh bread crumbs

Remove giblets and neck from inside chicken. Rinse chicken inside and out with cold water, pat dry with paper towels and set aside. In large non-stick skillet, heat 1 Tablespoon of the olive oil over medium low heat. Add green onion and celery and gently cook until softened, then add mushrooms, and cook until tender. Stir in 2 teaspoons of salt free lemon herb seasoning, lemon zest, 2 Tablespoons of the lemon juice (1/2 of it), and the bread crumbs. Stir well to combine but don't make a mush. Turn off the heat and let stuffing cool a bit.

Place chicken on a rack in a roasting pan. Stuff with the mushroom stuffing. Don't pack it in, just lightly spoon it into the bird. Truss the chicken, (this will make a nicer presentation), but not absolutely necessary. In a small bowl, combine the remaining olive oil, lemon juice, and lemon-herb seasoning. Brush this mixture all over the chicken. Bake at 350 F for 1 1/2 to 2 hours or until done. Serves 4 - 6.

Note: You can double the stuffing recipe and bake half of it or all of it in a dish, covered with foil or a lid along side the chicken for about 45 minutes, remove the cover and bake another 15 minutes or until lightly browned on top.

Pan drippings for a sauce: Skim off the excess fat. Add some water (up to a cup) or dry white wine or even add more fresh lemon juice with some water to the pan and bring the drippings to a simmer with a little more lemon-herb seasoning and perhaps some freshly ground white or black pepper. Scrape up the fond (browned bits at the bottom of the pan) and let the liquid reduce to intensify the flavors. Serve on the side.
Serving suggestions: Slice the chicken and serve with some of the stuffing and some of the sauce. Serve with rice, or pasta like orzo, with minced fresh parsley, sprinkled over all. A fresh green salad would also go well with this chicken recipe. Fresh lemon wedges, (optional), served on the side.

Lemon Chicken Stir Fry

Ingredients:
8-ounces Angel hair pasta, uncooked
1-cup Cherry tomatoes cut in half
1½-teaspoons Lemon pepper
1-tablespoon Olive oil
1-pound Chicken breasts, boneless & skinless cut into small pieces
1-medium Onion, sliced
2-cups Broccoli, chopped
½-cup Sugar snap peas
1-cup Chicken broth
2-teaspoons Lemon peel, grated
4-teaspoons Cornstarch


Chicken

Instructions:
Cook and drain pasta according to directions on package of pasta. Heat oil in large skillet over medium-high heat; add chicken and onion; stir fry for about 6 minutes or until chicken is brown and no longer pink. Add broccoli and peas to chicken mixture. Cook over medium-high heat for about 5 minutes, stirring constantly, until vegetables are slightly crisp. Combine broth, lemon peel, cornstarch and lemon pepper in a small bowl; stir into chicken mixture. Cover and cook over medium-high heat for about 2 minutes or until sauce is thickened and vegetables are coated. Stir in tomatoes and heat thoroughly. Serve warm over angel hair pasta.

Ingredients:
1-package (10 small) Flour tortillas
1-packet Taco seasoning mix
2-cups Mexican blend shredded cheese
2-tablespoons Oil
1-pound Chicken breasts, boneless & skinless, sliced
1-medium Onion, chopped
15-ounce can Black beans, drained
1-cup Whole kernel corn, drained
½-cup Black olives, sliced
½-cup Water
2-tablespoons Lime juice, fresh
1-tablespoon Lemon juice, fresh
2-cups Salsa
Instructions:


Chicken

Slice chicken into 2-inch strips and set aside. Heat oil in a large skilled over medium-high heat; add chicken strips and chopped onion; cook for 5 minutes or until chicken is no longer pink. Stir in taco seasoning mix, beans, corn, black olives, water, lemon juice and lime juice. Bring to a boil. Reduce heat to low; cook, stirring often for 5 minutes or until mixture is thickened.

Take tortillas out of plastic bag and microwave on high, 100% power for 15 seconds or until warm. Or heat each tortilla one at a time in a small to a medium skillet over medium-high heat until warm.

Grilled Chicken Recipes - My Newest Recipe - Lemon Ginger Chicken

Now here is an interesting post today. I am going to talk about grilled chicken recipes but you will never (in a million years) figure out where I got this recipe. My wife and I were on a road trip the other day. Road trips, now there is a place for inspiration. My wife and I were traveling through Vegas, you know, the one out there in Nevada, the one they call, 'sin city,' and I was a little thirsty and was out of coffee there for a bit. Now anyone who knows me, knows that this is a situation that needs to be remedied pretty quickly.

So I asked my wife for a sip of her tea. Whoa, what a combination of flavors! I asked her what kind of tea that was and she said, lemon ginger. Well, I like that. I think I will have one I told her. Yeah, right, she said that was her last teabag of that flavor. Well, you know me, and as I was driving along the interstate there I Started to think that if it was a good flavor for tea, then it ought to be a good flavor combination for some grilled chicken recipes. The first recipe I will call lemon ginger chicken. And so for the next - I do not know how many miles - I conjured up this recipe in my head. I mean it is not all that hard for I have had a lot of practice....that is conjuring up recipes while driving.

So here is my latest in a long, long string of grilled chicken recipes. And maybe this will also answer that question of where the heck does he get these recipes for grilled chicken from. Here it is:

Ingredients
four tablespoons lemon zest
two-thirds cup lemon juice
four teaspoons ginger, peeled and minced
four teaspoons light brown sugar, firmly packed
one teaspoon minced garlic
one tablespoon vegetable oil
salt and pepper to taste
one and a half pounds chicken tenders
Directions

Combine the lemon zest, lemon juice, ginger, brown sugar, oil, salt, in a zipper-lock plastic bag. Add the chicken, squeeze out the air, and seal the bag; turn to coat the chicken. Throw it in the fridge, turning every so often for up to about 45 min.

Then I take the tenders and thread them onto skewers which I have been soaking in water for about an hour. Now you can take those chicken tenders and place them on a hot grill, BBQ which you have oiled so that the chicken does not stick. Just a few minutes of each side and they are done. It really does not take very long and you have really, really good chicken. Hey, you could even serve it with some lemon-ginger tea.

Ingredients of chicken fried steak recipe:
4 cube steak cutlets
1 egg
1/4 cup milk
1 or 1/2 (approx.) flour
1/3 cup (approx.) cooking oil

1/4 teaspoon paprika
Instructions of chicken fried steak recipe:
  1. In a small bowl, beat the egg and milk together. Set aside.
  2. In a little cup, shake all the spices together. Sprinkle on both sides of the cutlets.
  3. Lay flour out on a large plate or cutting board. Drag the cutlets through the flour so that both sides are completely covered. Dip each cutlet into the egg/milk mixture and then drag once more through the flour. Set cutlets aside.
  4. Add cooking oil to a large, heavy skillet-oil should be about 1/2 inch deep. Heat skillet to medium-high heat. When a drop of water sprinkled into skillet "pops", you're ready to cook.
  5. With tongs or a long fork, carefully place each cutlet into the hot oil. Fry cutlets on both sides, turning once, until golden brown. Reduce heat to low, cover and cook 4 or 5 minutes until cutlets are done through. Drain cutlets on paper towels.
Here is a tip for some gravy:
  1. Save 2 Tablespoons of the oil when you are finished.
  2. Add about 3 Tablespoons of flour and a 1/4 teaspoon of salt.
  3. Heat over medium heat and gradually add 1/2 cup of milk and 1/2 cup of water.
  4. Add dashes of pepper to taste.

Put the mixture in a greased nine by five inch baking dish and bake for an hour or until a meat thermometer registers 165 degrees F. Let it stand for ten minutes, and then serve in slices in pita rounds, with whichever toppings you like.

This is a recipe that my family has used for many years. My father has operated and owned a family meat store for thirty some years and his father before that. My dad uses this barbecue chicken recipe endlessly and it never fails to satisfy anyones' taste.

Chicken


Preparation:
Take as much chicken breast as needed and put it in a plastic bag with Italian dressing. Use enough dressing so that all the chicken is covered completely. Put it in the fridge over night or for several hours.

Heat the gas grill to medium heat. It is best to oil the surface of the grill with either a spray oil or regular oil. This should be done before the grill is turned on as to avoid any unnecessary flames.

Cook the chicken, continuously flipping each piece until the chicken breasts are cooked all the way through with no pink. Now it is time to add the barbecue sauce. I prefer to use "The Jug" barbecue sauce. Apply sauce to one side of each piece. Then pick up each piece and rubs its bottom on the top of the pieces that already are covered with barbecue sauce. Cook that side for about 2 minutes. Flip over each piece and apply barbecue sauce once again using the same steps as above. Cook on this side for 2 minutes and then the barbecue chicken is done! So eat!

Oh, who doesn't love Chicken Nuggets? That would be a unanimous yes from most children and yes from adults as well. They can easily be turned into a gluten-free recipe with little effort. If children are not in the home, invite the grandkids or the nieces and nephews over. They will love these nuggets and will keep begging for more. Sometimes, I yearn to harbor these bad boys to myself and indulge in their luscious flavor in peace. Alas, I have the privilege of sharing them with my children and at least I get my portion as I scatter them away from my plate (I am concerned how many my children will actually consume once they are teenagers). The ingredients for this delicious main course are cut chicken, 2 eggs, four to five toasted gluten-free bread crumbs, olive oil, paprika and pepper. Bake them into a preheated 350 degree oven, and a few minutes later the mad dash for the nuggets is on.

Looking for a savory all natural broth flavor to include with the gluten-free chicken recipe repertoire? The search is over once Lemon Herb Chicken is arranged on the dinner plate. After each bite of the blend of spices and enticing flavor, those at the table will be tempted to have seconds. It simply does not need any enhancements to persuade it to be consumed. Of course there are others spread all over the country and it is really up to you to take the time and adventure to discover these gems of places and taste some of the best food at these Chinese food restaurants.

Easy Recipes For Chicken Breasts

There are hundreds of ways to prepare chicken. In this article you'll find recipes for; garlic chicken, mushroom chicken and lemon chicken, 3 very different flavors.


Chicken

I personally always use chicken breasts, however chicken thighs can almost always be substituted if your preference is dark meat. Since chicken thighs are smaller than chicken breasts increase the number of chicken pieces in any given recipe.

I also prefer the taste of kosher chicken and so never use salt in my recipes as kosher chickens are salted during the processing period. I also always thoroughly wash the chicken and then pat dry prior to beginning the seasoning process.

Garlic Flavored Chicken
4 chicken breasts (you can use either skin on, or skin off chicken pieces)
¼ cup grated parmesan cheese
¼ cup dry bread crumbs
¼ cup olive oil
2 teaspoons crushed garlic

In a sauce pan, combine the garlic and oil. Heat over very low heat so that flavors mix. Combine the bread crumbs and parmesan cheese in a dish that you can roll the chicken pieces in. Generously dip the chicken in the garlic and oil mixture, then roll in the cheese and bread crumb mixture. Bake as you would normally bake chicken, about an hour at 350 degrees.

Note: if you use an oil or bread crumbs that are garlic flavored, your chicken will have additional garlic flavor.

Mushroom Flavored Chicken
4 chicken breasts
1 can cream of chicken soup
2 cans cream of mushroom soup
1 soup can of milk
1/2 tsp. pepper
1/2 tsp. salt

Pour one can of the cream of mushroom soup into a baggie and marinate chicken several hours. Cook chicken about 35 minutes in a 350 degree oven. While chicken is cooking, prepare the sauce. Combine the salt, pepper, milk, cream of chicken soup and the other can of cream of mushroom soup. Mix well. Remove chicken from oven and pour the sauce over the chicken and bake for at least 20 more minutes or until chicken is done.

Note: You can also add cut up mushrooms to the baking pan for additional flavor.
Lemon Chicken
4 chicken breasts
1/3 cup lemon juice
½ cup butter or margarine
½ cup flour
1 clove of garlic, chopped
1 tablespoon minced onion
salt and pepper to taste

Lightly dust chicken with flour. Melt butter and then coat chicken with butter. Put remaining butter in baking dish. Cook for 30 minutes in a 375 degree oven. During cooking, brush chicken with butter a few times.
While the chicken is cooking, prepare the sauce. Mix together the lemon juice, onion, garlic, salt and pepper. Remove chicken from oven and baste with sauce. Cook an additional 25-30 minutes, basting with the sauce a few times during cooking.

Whole Roast Chicken Recipe

Chicken Recipe

Ingredients:
1 whole chicken (medium size)
1 1/2 tablespoon red pepper powder
1/2 tablespoon turmeric powder
1 tablespoon hot mix spice powder (garam masala)
1/2 tablespoon chaat masala
Salt to taste
250 gm yogurt
1/2 cup raw papaya paste
1/2 cup cream
1/4 cup oil
Procedure:

1. Take whole chicken and make cuts from sharp knife on legs, wings and breast portions.

2. To prepare marinate for the chicken combine all the ingredients mentioned above including red pepper, turmeric powder, hot mix spice, chaat masala, salt, yogurt, papaya paste, cream and oil. Mix all these ingredients well so that a thick paste would form.

3. Now using hands marinate the whole chicken with the prepared marinade, coat the chicken well with spices so that all the flavors absorb in every part of chicken. Leave it for 30 minutes at room temperature.

4. Preheat oven to 400 degrees F. At first place a wide deep pan containing water in oven to boil, then place the chicken in the greased baking tray and pour 2-3 tablespoon of oil on it. Put the chicken tray on the boiled water pan in oven and let it bake for 30-40 minutes until it becomes tender completely and color changes to brown.
