Crockpot Cooking For Your Family

We are all looking for ways to put a healthy meal on the table fast, especially on those days when there are more obligations and places to be than hours in the day. On the days when you know your schedule is packed, pull out your Crock-pot in the morning and put it to work. With just a little bit of pre-planning, a hot, nutritious, hearty and delicious meal can be waiting for you when you finally arrive home after your long, exhausting day. What's more, by pre-planning the Crock-pot dinner and cooking extra food you can easily get two or three meals out of the main dish you made, saving you even more time and money. Here are three Crock-pot dishes and meal ideas that your family will love.


Crockpot

*Large pork roast, cooked in the Crock-pot with carrots, potatoes and onions. Cook on low without adding liquid.

Meal #1 - Serve the pork roast with the vegetables.

Meal #2 - Shred part of the remaining pork and heat with BBQ sauce in a small saucepan on the stove.
Serve as sandwiches on split rolls with baked beans and Cole slaw.

Meal #3 - Add cubes of cooked pork to a vegetable stir-fry and serve over steamed rice.

*Whole chicken, cooked in the Crock-pot with garlic, onion, carrots and celery. Cook on low, adding 2 cups of water and a teaspoon of salt. When you get home, save the liquid, cool the chicken, pull it off of the bone and leave it in small pieces. Discard the skin and bones.

Meal #1 - Boil egg noodles and serve topped with chicken pieces and broth.

Meal #2 - Roll cooked chicken and cheese into corn tortillas and top with enchilada sauce. Bake until heated through, about 20 minutes Serve with refried beans.

Meal #3 - Heat on the stove in a little bit of oil. Serve over Caeser salad.

*1 lb. dried black beans. Add 2 bay leaves, 2 smashed gloves of garlic and a ham hock, if desired. Cover with 3 inches of water and set heat to low. Divide into three portions.

Meal #1 - Serve as bean soup, adding chicken broth, chili powder, salt and cumin. Serve with sour cream and cheddar cheese.

Meal #2 - Roll beans into tortillas. Top with cheese and green chili sauce and serve as burritos.

Meal #3 - Use as a side dish for a steak or baby back ribs. Season with salt and paprika.
