Easy Chicken Fajita Recipe For Your Mexican Theme Party

I enjoy theme parties so this Chicken Fajita Recipe is perfect for a Mexican party. This chicken recipe has proved a winner especially with the kids. YOu lay out all the prepared ingredients and guests can build their own fajitas. If you are a health conscious mom like me then at least you know you're getting a few veggies into your kids' diet. Using bottled salsa is a good time saver but making your own is healthier and probably nicer tasting.

Chicken Fajitas Ingredients - Serves 4
  • 4 chicken breast fillets
  • 2 tablespoons olive oil
  • 1/4 cup (60 ml) lime juice
  • 2 cloves garlic, crushed
  • 1 teaspoon ground cumin
  • 1/4 cup (15 g/ 1/2 oz) chopped fresh coriander leaves
  • 8 flour tortillas
  • 1 tablespoon olive oil, extra
  • 2 onions, sliced
  • 2 green capsicums (peppers), cut into thin strips
  • 1 cup (125 g/4 oz) grated Cheddar
  • 1 large avocado, sliced
  • 1 cup (250 g/8 oz) bottled tomato salsa
  1. First you need to marinade the chicken breasts. Trim the chicken of fat and sinew, and cut into strips. Place the chicken strips in a shallow non-metal dish. Combine the oil, lime juice, garlic, cumin and coriander in a jug, and mix well. Pour the marinade over the chicken then cover it and refrigerate for a few hours or overnight.
  2. Preheat a barbecue grill or flatplate to high. Wrap the tortillas in foil and place on a cool part of the barbecue grill to warm through for 10 minutes (do check them for over heating). Heat the oil on a flatplate. Fry the onion and capsicum (green pepper) for 5 minutes, or until soft. Move the vegetables to a cooler part of the plate to keep warm.
  3. Place the chicken on the flatplate and cook for 5 minutes, or until just tender but cooked through. Serve up the chicken, onion and capsicum, cheese and avocado over the tortillas. Top with the salsa and roll up to enclose the filling. Alternatively you can put all the ingredients out in bowls and let your party guests build their own chicken fajitas.
  4. If you buy bottled salsa, try get the best quality possible. You can add extra chili powder if you prefer hotter food. 
  5. Other great party food ideas are nachos and dip or tortilla soup.
