Low Carb Recipe For Amazing Chicken Salad

With so many different low carbohydrate diets, different peoples likes and dislikes, and so many recipes that have been created, or have yet to be created, it is hard to find something everyone can enjoy. I hope that this chicken salad will be one you enjoy as much as we do.
This chicken salad is 16 grams of net carbohydrates per serving.

Chicken Salad

Ingredients:
1/2 cup celery
1/2 cup mayonnaise
4 tablespoons relish
2 tablespoon Dijon mustard
pinch black pepper
3 chicken breasts
A variety of lettuces, and salad greens

Instructions:
Cook chicken at 350F until cooked through, and cut then into bite size pieces. Allow to cool.
Chop up the celery into small pieces. Place into a large bowl. Add mayonnaise, relish, Dijon mustard and black pepper. Mix very well.

Place the chicken into the celery and mayonnaise mixture.
Cover the bowl, and refrigerate for several hours. The longer that this is refrigerated the better the flavors blend together.

Serve over the variety of lettuces and salad greens. That you have chosen,
Per serving (makes 4) 410 calories, 16 g carbohydrates, 1 g fiber, 41 g protein

My Extra Tips:
I recommend using Dijon mustard and not substituting with a regular mustard. It ass that hint of flavour that makes this salad something special.

Use as much pepper to suit your tastes. I chose not to add extra salt, but again feel free to add what prefer.
The minimum amount of time I would leave in the fridge is 1 hour. If you do plan ahead, make this the day before. Then the flavors will be well blended.
Have fun, and try something new!
